A dab of oil

Omelette pan
While the pan is pre heating on a low-med setting, scramble one egg by mixing in a bowl with a fork.
Spread the dab of oil around in heated pan.
Add the scrambled egg and spread around.
Quickly add the cheese to one side.
Wait until egg isn't as runny in the center, then fold the side without cheese over the side with cheese.
I usually turn the heat low at this point. Then, flip over to cook the other side for approx. a minute.
After moving to a plate let it cool before enjoying!
